Roasted Red Pepper Hummus on a Crostini
Canned chickpeas | 15 Ounce , drained, rinsed | |
Roasted red pepper | 1 , seeded | |
Tahini paste | 2 Tablespoon | |
Garlic cloves | 2 Small , mince | |
Juice of lemon | 2 | |
Fresh parsley | 3 Tablespoon | |

French bread loaf | 1 | |
Olive oil | 1 Tablespoon (as needed) |
GETTING READY
1) Preheat broiler to high.
MAKING
2) In food processor, combine the chick peas, roasted red peppers, tahini paste, garlic, parsley, the juice of 1 lemon, salt and pepper.
3) Turn on the food processor and drizzle in extra virgin olive oil, until it is a smooth consistency.
4) Slice bread into ½ inch slices and place onto a baking sheet. Drizzle olive oil over the bread and place under the broiler. Toast the bread for about 2-3 minutes.
FINALIZING
5) Place a dollop of roasted red pepper hummus on the crostini.
SERVING
6) Garnish with roasted red peppers and serve!
