Korean Jap Chae

Ingredients
  Cellophane noodles 4 3⁄5 Ounce
  Beef 1 Cup (16 tbs), strips
  Carrot 1⁄3 Small, julienned
  Onion 1⁄2 Medium, thinly sliced
  Spinach 3 Ounce
  Shiitake mushrooms 3 , soaked
  Sweet pepper 1⁄3 Small, strips (Optional)
  Eggs 2 (Optional)
  Olive oil 3 Tablespoon, divided
  Salt and pepper To Taste
For the beef marinade
  Soy sauce 1⁄2 Tablespoon
  Cooking wine 1⁄2 Tablespoon
  Garlic 1 Teaspoon, mince
  Sugar 1 1⁄2 Teaspoon
  Black pepper 1 Pinch
For the spinach marinade
  Soy sauce 1 Teaspoon
  Sugar 1⁄2 Teaspoon
For the mushroom marinade
  Soy sauce 1 1⁄2 Teaspoon
  Garlic 1⁄4 Teaspoon, mince
For noodles marinade
  Soy sauce 2 Tablespoon
  Sugar 1⁄2 Tablespoon
  Olive oil 2 Tablespoon
For the sauce
  Soy sauce 1 1⁄2 Tablespoon
  Sesame oil 2 Tablespoon
  Sugar 1 Tablespoon
  Sesame seeds 1 Tablespoon
  Black pepper 1⁄8 Teaspoon
Directions

GETTING READY
1. Slice the beef into thin strips, set aside in a bowl.
2. Mince the garlic, slice the onions thinly, julienne the carrots, slice the green bell pepper, set aside.
3. Soak the Shiitake mushrooms in water for 3 hours.

MAKING
4. Marinate the beef with soy sauce, cooking wine, garlic, sugar and black pepper, mix well and set aside.
5. In a pot boil water, add salt and blanch the spinach in the water, once done rinse in cool water and drain.
6. Squeeze out the water and place the spinach in a bowl, combine soy sauce and sugar, mx well and set aside.
7. Squeeze out the water from the shiitake mushrooms, remove the stems and slice the mushrooms.
8. Place it in a bowl and marinate with soy sauce, sugar, garlic and black pepper, mix and set aside.
9. In a frying pan add olive oil and sauté the onions for 20 seconds, sprinkle salt, set aside.
10. In the same pan sauté the green pepper and carrots separately with some salt, remove and set aside.
11. Stir fry the mushrooms and set aside.
12. Stir fry the beef until completely cooked, set aside.
13. In a pot, boil water and cook the cellophane noodles for 11minutes and once cooked drain the water.
14. In a large pan pour olive oil and add the noodles and pour the soy sauce and sugar, stir fry the noodles for few minutes and set aside in a plate.
15. In a large bowl combine noodles with beef, mushrooms, carrots, onions, green pepper and spinach.
16. Pour soy sauce, sesame oil, sugar, sesame seeds and black pepper, mix all the ingredients well.
17. Once done transfer in a serving plate and add fried egg strips if you like for garnish.

SERVING
18. Serve the jap chae immediately.
