Place a wok or stir-fry pan over high heat until hot. Add the oil, swirling to coat the sides. Add the onions and Chinese sausage for 1 minute. Then add garlic for another 30 secs. Add egg and let it cook for about another 10 secs. Add shrimp, peas and carrots and cook for 20 secs. Fold and stir rice in. Then add soy sauce, Maggi seasoning, mushroom seasoning, sugar. Add pepper to taste. Stir and fold for another 2 minutes until even.
