Soak ribs in cold salt water for about 30 min and rinse.
In a thick pan or (preferably Dutch oven or cast iron pot), heat oil and place 2 tbsp of sugar into pan. Stir sugar until it caramelizes to a medium brown color. Immediately place ribs into pot. In this episode we had to work in batches due to the small size of our wok. The goal is to have enough room for the ribs to brown in the pot.
Once browned on all sides, pour 1-2 tbsp of thick soy sauce and stir. Then pour in enough coconut soda to cover the meat and reduce to low heat to braise until liquid reduces. Once reduced pour in 2 tsp of corn starch slurry. Stir for 1 minute and serve.
