Coconutty Peanutty Chicken

This spicy peanut sauce and chicken is my family's favorite. It's recommended by my grandma. You should try this yourself at least for once.
Ingredients
  Boneless chicken breast 1 , cubed
  Olive oil 2 Tablespoon
  Garlic 1 Tablespoon
  Ginger 1 Tablespoon
  Red onion 1⁄4 Cup (4 tbs)
  Hot pepper 1 , sliced and diced
  Soy sauce 3 Tablespoon
  Honey 2 Tablespoon
  Lemon juice 1 Tablespoon
  Curry powder 2 Tablespoon
  Peanuts 1⁄2 Cup (8 tbs)
  Coconut milk 1 Cup (16 tbs)
  Water 1 Cup (16 tbs)
  Tarragon 1⁄4 Teaspoon
Directions

1. Medium heat the saucepan.
2. Add olive oil to the pan.
3. Add boneless chicken breast, ginger, garlic, and red onion.
4. Cook the chicken.
5. Add hot pepper. (make it spicy of your choice)
6. Add soy sauce, honey, lemon juice, curry powder, ground peanuts, coconut milk and water to the pan.
7. Stir the ingredients, bring them to boil.
8. Lower heat, simmer for 10 minutes.
9. Set the pan aside.
10. Serve on a plate with coconut rice, with tarragon topping.
