Lebanese Vegetable & Chickpea Tagine

Lebanese Vegetable & Chickpea Tagine, is an amalgam of subtle flavors. A wondrous stew of vegetables with chickpea which has fruit and vegetable flavors and nuttiness of almonds.
Ingredients
  Olive oil 100 Milliliter
  Dried chickpeas 100 Gram, soaked over night
  Red onions 2 , cut into six wedges
  Apricots 5 , halved and stoned
  New potatoes 1⁄2 , cut in half
  Pumpkin/Butternut 300 Gram, diced
  Courgette 1 , sliced
  Turmeric 1 Teaspoon
  Garlic 3 Clove (15 gm), chopped
  Paprika 1 Teaspoon
  Chilli flakes 1 Teaspoon
  Ground cumin 1 Teaspoon
  Ground coriander 1 Teaspoon
  Cinnamon stick 1
  Bay leaves 2
  Dried cranberries 100 Gram
  Canned whole tomatoes 250 Gram (1 can)
  Whole almonds 10
  Vegetable stock 200 Milliliter
For yogurt dressing
  Natural yoghurt 200 Milliliter
  Chopped mint 1 Tablespoon
  Honey 1 Tablespoon (Bell Heather)
Directions

MAKING
1. In a pan, heat oil, gently sweat onion, garlic and add turmeric, paprika, chili flakes, cumin, coriander, cinnamon, bay leaves and mix.
2. Add apricots, potatoes, pumpkin, cranberries, tomatoes, almonds, stock and chick peas.
3. Cook gently for 20 minutes until the potatoes and pumpkin are tender. Each time the liquid disappears top it up to the level of the ingredients and stir the base of the pot.

FINALISING
4. In a pan, fry the courgette slices until well cooked.
5. In a bowl, add yogurt, chopped mint, coriander, honey and mix well until smooth.

SERVING
6. Serve tagine hot, with courgette slices on top with yogurt dressing.

Story
Tagine, is a basically the earthen pot in which the stew is prepared. I realized its importance once I had a chance to taste the original tagine stew made in it. The earthen vessel gives the dish so nice earthy flavors and capturing the heat and thoroughly cooking the food.
