Bok Choy With Cilantro Soy Sauce

Ingredients
  Tomato juice 1 Cup (16 tbs)
  Garlic 2 Clove (10 gm), finely chopped
  Ginger root 1 Teaspoon, finely chopped
  Bok choy 4 Cup (64 tbs), chopped (stems and leaves)
  Mushrooms 4 Ounce, chopped (1 cup)
  Green onions 1⁄4 Cup (4 tbs), chopped
  Yellow bell pepper 1 Small, chopped
  Fresh cilantro 2 Tablespoon, chopped
  Lime juice 2 Tablespoon
  Soy sauce 1 Teaspoon
Directions

MAKING
1) In a 10-inch skillet, mix 1/2 cup of the tomato juice, the garlic and gingerroot. 2) Let the mixture cook over medium heat for 2 minutes.
3) Add the remaining tomato juice, bok choy, mushrooms and vegetables.
4) Stirring in between cook until bok choy leaves are wilted.
5) Add the remaining ingredients.

SERVING
6) Serve Bok-choy with cilantro soy sauce.
