Malaysian - Roti Canai

Roti Canai, is a Malaysian Indian cuisine product. Very widely eaten in the south east Asia predominantly with Kare Kambing or the Goat Curry. There is no need for searching a restaurant for a roti canai, you can find it everywhere, easily available on the street side vendors, this flaky bread oozes out sheer passion for food lovers. A must try, if not at home then certainly in Asia!!
Ingredients
  Plain flour 10 Ounce
  Water 1⁄2 Cup (8 tbs)
  Ghee 1⁄2 Cup (8 tbs)
  Salt To Taste
Directions

GETTING READY
1. Sieve flour and salt into a bowl.
2. Add ghee and water and knead till the dough smooth.
3. Let the dough rest for about 2 to 3 hours to soften.

MAKING
4. Make small balls from the dough, oil the work top with ghee and work each ball into a very thin sheet.
5. First flatten with oiled palms, now thin it again by pulling the edges.
6. Sprinkle the dough sheet with 1 tsp ghee and fold in edges, shape it into a square.
7. Now sprinkle a little flour and roll out slightly.

FINALISING
8. Preheat the griddle or pan, grease it well with ghee.
9. When hot, put roti on, cook for about 2 to3 minutes until golden brown.
10. Lift roti with a spatula, grease the griddle with ghee, and cook the other side.

SERVING
11. Serve roti canai with choice of curry. Ideally goat curry goes very well with roti canai.

Story
Roti Canai, is my number one food accompaniment in terms of street side foods. I just simply love this bread, and a meal with kare kambing makes me nostalgic. I remember, going to this place in Jakarta where we used to get great Roti canai with kare kambing, after a few weeks he went for his vacation. I often used to go to the same place to see whether he has come back or not, just for the love of Roti canai. He finally came back, what a relief it was. Don't wait have a dig at it!!!
