Pineapple Yam Kebabs
|Apples||4 , cut in quarters|
|Butter||1⁄2 Cup (8 tbs), melted|
|Lemon juice||2 Tablespoon|
1) Clean and scrub sweet potatoes.
2) In salted water cook sweet potatoes for 25 minutes until tender.
3) Peel out the skin of the potatoes and cut into large pieces.
4) On skewers, thread potatoes, pineapple and apple quarters alternately.
5) In a small bowl mix remaining ingredients.
6) Brush the vegetables with the mixture.
7) Grill over hot coals until brown. Turn frequently and baste repeatedly.
8) Serve with pork or chicken.
