Baba Ghanoush

Baba Ghanoush is actually not made with tahini, it is made with lemon juice and garlic and olive oil and garnished with all kinds of vegetables.
Ingredients
  Eggplant 1 Large, baked and peeled
  Juice of lemon 1⁄2 Cup (8 tbs)
  Garlic 2 , minced
  Salt 1⁄2 Teaspoon
  Tahini 1⁄2 Cup (8 tbs) (Blend In Blender Or Mix With Mortar)
  Mint/Parsley 1 Tablespoon (For Garnish)
  Olive oil 1 Teaspoon
  Cayenne pepper 1 Teaspoon
Directions

Roast the eggplant then place a plastic bag to cool, then you can peel and remove top, place in a bowl. Add garlic, lemon juice and tahini paste, blend in a blender or with a mortar. Spread in a place and garnish with parsley or mint and top with olive oil and a sprinkle of cayenne pepper or paprika.
