Lilikoi Chicken Kabobs
|Chicken breasts||2 Pound|
|Frozen lilikoi juice concentrate||1 Can (10 oz), thawed (passion fruit)|
|Canned pineapple chunks||13 1⁄2 Ounce, drained (1 can)|
|Canned button mushrooms||4 Ounce (1 can)|
1. Prepare the chicken breasts by boning them and cutting into bite-size pieces.
2. Marinate in lilikoi juice 2 or 3 hours.
3. On skewers thread chicken pieces alternately with pineapple chunks and mushrooms and grill on a hibachi 20 minutes, turning frequently and basting with lilikoi juice.
4. Serve the chicken pieces poured over with the basted liquid.
