Sour Kubbas Iraqi
|Turnips||1⁄2 Kilogram, peeled and chopped|
|Chopped spinach||10 Ounce (1 Large Bunch)|
|Tomatoes||1 Kilogram, blanched and strained|
|Water||4 Cup (64 tbs)|
|Lemon juice||1 Tablespoon (From 1 Lemon)|
|Onion||1 Medium, chopped|
|Rice flour||2 Cup (32 tbs)|
|Rice flour||3 Tablespoon, flour mixed to a paste in 1 cup water|
|Minced meat||1 Cup (16 tbs)|
|Boiled minced meat||1⁄4 Kilogram|
Make kubbas by putting flour, mince and salt into bowl and mixing to a stiff dough with water.
Knead hard till very soft.
For the filling, fry onions in ghee till brown, add mince and fry well, wet hands, fill mince into centre of dough and form into balls.
In ghee fry onions light brown, add spinach and turnips.
Fry 3-4 mins add salt, pepper, tomato and water.
When boiling, gently slip in the kubbas and boil for 10 mins., then lower heat and simmer till kubbas are soft.
Add flour paste and bring to the boil, remove from fire.
Add lemon juice.
