Down Home Rhubarb

Ingredients
  Fresh rhubarb 2 Pound (About 7 To 8 Cups)
  Water 1⁄2 Cup (8 tbs)
  Sugar 1 1⁄2 Cup (24 tbs)
  Vanilla 1⁄2 Teaspoon
Directions

Trim rhubarb and cut into 1-inch pieces.
Combine with water and sugar in slow-cooking pot.
Cover and cook on low 2 to 3 hours.
Add vanilla, if desired.
Chill.
Makes about 4 cups.
