Mutton Biryani Ahmedi

Ingredients
  Meat 1 Kilogram, cut into large pieces
  Rice 1⁄2 Kilogram, par boiled
  Sliced onions 4 Large
  Ghee 1⁄4 Kilogram
  Sugar 1 Tablespoon
  Bay leaves 4
  Cardamoms 6
  Cloves 6
  Beaten yogurt 2 Cup (32 tbs)
  Garlic pod 1 Large (Whole)
  Ground ginger 2 Inch
  Salt To Taste
  Chilly powder 3 Teaspoon
  Coriander powder 2 Teaspoon
  Cinnamon stick 2 Inch
  Peppercorns 1⁄2 Teaspoon
Directions

Heat ghee.
Fry baghar till brown.
Then add onions and brown well.
Put in meat, ginger and garlic and brown well.
Then add salt, chilli and coriander powders and sugar.
Fry again for 5 mins.
Add 2-3 cups hot water and simmer till meat is tender.
Add in yoghurt and fry again till thick masala is formed.
Remove half the masala.
Put layer of rice in pan.
Spread removed masala on top.
Cover, keep pan on griddle and cook on a low flame for 20-30 mins.
Serve with raita.
