Turkey Satay

Ingredients
  Water 6 Tablespoon
  Brown rice 6 Tablespoon
  Carrots 1⁄2 Cup (8 tbs), sliced
  Skinless boneless turkey breast 4 Ounce
  Low-sodium soy sauce 1 Teaspoon
  Honey 1 Teaspoon
  Powdered ginger 1⁄4 Teaspoon
  Garlic 1⁄4 Teaspoon, minced
  Chicken stock 3 Tablespoon
  Peanut butter 1 Tablespoon
  Lemon juice 1 Teaspoon
  Ground cumin 1⁄4 Teaspoon
Directions

In a 1-quart saucepan over medium-high heat, bring the water to a boil.
Stir in the rice.
Cover, reduce the heat, and simmer for 5 minutes.
Remove from the heat, stir, and let stand for 5 minutes.
Meanwhile, steam the carrots for 5 minutes, or until tender.
Set aside and keep warm.
In a medium bowl, mix the turkey, soy sauce, honey, ginger and garlic.
Thread the turkey onto metal skewers.
Broil about 4" from the heat for 4 minutes per side, or until cooked through.
In a 1-quart saucepan, mix the stock, peanut butter, lemon juice and cumin.
Whisking constantly, bring to a boil over medium heat.
Remove from the heat.
Serve the turkey sauce.
