Turkish Fig Delight

Ingredients
  Dried figs 1⁄4 Kilogram
  Lemon, rind 1 Teaspoon
  Lemon juice 1 Tablespoon
  Honey 3 Tablespoon
  Cream 1 Cup (16 tbs)
Directions

Wash and dry figs, cut into small pieces.
Cover them with boiling water and leave to soak overnight.
Simmer figs in the water in which they were soaked until very tender.
Remove from heat and sieve into pulp.
Mix in lemon rind, lemon juice and honey and boil, uncovered, for 15 mins.
Remove from heat and cool completely.
Whip cream and fold it into the fig puree, giving a marbled effect.
Chill and serve.
