Roast Saddle Of Young Boar

Ingredients
  Saddle 1 (Of Young Boar)
  Carrot 1
  Onion 1 , cut in rings
  Shallots 2 , cut in half
  Rosemary 1 1⁄4 Bunch (125 gm) (Large Bunch)
  Red wine 1⁄4 Cup (4 tbs)
  Butter 3 Tablespoon
  Chestnuts 18
  Salt To Taste
  Pepper To Taste
Directions

Marinate boar in carrot, onion, shallots, salt, pepper, rosemary and wine to cover for 3 to 4 hours.
Turn meat twice.
An hour before roasting, remove from marinade.
Dry well.
Strain marinade and reserve.
Roast in buttered earthenware baking dish in hot (4500) oven 20 minutes.
Reduce heat to 3500.
Top with 3 tablespoons melted butter.
Add 1/4 cup heated marinade to roasting dish.
Baste frequently, adding hot marinade as needed.
Roast 18 minutes per pound.
Meanwhile: Boil and skin chestnuts.
Add to roast.
Cook 15 minutes.
Serve chestnuts as a garnish.
