Zaatar Flatbread With Feta Cheese

Crunchy warm Arabic flatbread topped with zesty za'atar spice (consists of thyme, savory, oregano, sumac, and sesame seeds) and tangy feta cheese. Usually served at breakfast with a side of hummus, vegetables, and yogurt cheese.
Ingredients
  Zaatar 1 Cup (16 tbs)
  Olive oil 1⁄2 Cup (8 tbs)
  Biscuits dough 8 Ounce
  Crumbled feta cheese 1⁄2 Cup (8 tbs)
Directions

GETTING READY
1. Preheat the oven to 375 degree.

MAKING
2. In a bowl combine zaatar and olive oil, mix to make a paste.
3. Place the biscuit dough on a baking sheet and spread it out evenly.
4. Spread the zaatar mixture on each of the biscuit dough.
5. Top it with crumbled feta cheese.
6. Bake for 15 minute or until crisp.

SERVING
7. Serve the Zaatar Flat bread with Feta Cheese hot.

Story
Back in 1997, I visited the town of Ramallah in the West Back to do volunteer work. I stayed at a convent, which also happened to be an orphanage. Every morning I would smell the nutty and fragrant za’atar spice, baking on fresh homemade bread called mana’eesh. To this day when mana’eesh are baking in the oven, I get memories of those sweet nuns who made me feel at home.
