Curry Laksa

Ingredients
  Macadamia nuts/Brazil nuts 10 Medium
  Lemon grass 1 Large
  Galangal/Ginger 10 Gram, chopped finely
  Turmeric powder 1 Teaspoon
  Black pepper 1 Teaspoon
  Coriander 2 Teaspoon
  Shallots 10 Medium
  Garlic 4 Clove (20 gm)
  Belachan 1 Teaspoon
  Red chili 8
  Water 4 Cup (64 tbs)
  Coconut milk 400 Milliliter
  Sugar 2 Teaspoon
  Salt 2 Teaspoon
  Sunflower oil 4 Tablespoon
  King prawns 250 Gram
For serving
  Chicken breast 1 Large, cooked, shredded
  Eggs 3 Large, made omelet and shredded
  Fresh coriander 2 Tablespoon
  Rice noodles 500 Gram, cooked
  Bean sprouts 1⁄2 Cup (8 tbs)
Directions

GETTING READY
1. Chop shallots, lemon grass, slice red chilies, chop galangal.
2. In a blender, add shallots, garlic, lemon grass, galangal, turmeric powder, coriander powder, black pepper, macadamia nuts, belachan and oil. Blend it well to make a paste.

MAKING
3. In a sauce pan, heat oil and add the paste. Simmer it for a while.
4. Add sugar and salt and stir for a while.
5. Add water and coconut milk. Let it simmer for 20 minutes.
6. When the soup is ready add prawns.

SERVING
7. In a bowl combine rice noodles, bean sprouts, shredded omelette and coriander. Pour the soup on it and serve.
