Hummus With Tahini
|Chick peas||1 Cup (16 tbs), sorted and washed (3 Cups Cooked)|
|Tahini||1⁄2 Cup (8 tbs) (Middle Eastern Sesame Paste)|
|Garlic||10 Clove (50 gm), coarsely chopped|
|Olive oil||1 Cup (16 tbs)|
|Fresh lemon juice||1⁄2 Cup (8 tbs)|
|Coarsely chopped fresh parsley||1⁄2 Cup (8 tbs) (For Garnish)|
Soak the chick-peas in 6 cups of water overnight.
Drain and transfer to a large pot.
Add 6 cups of fresh water and bring to a boil over high heat.
Reduce the heat to moderately low and simmer for 1 1/2 hours or until very soft.
Place the chick-peas, tahini, garlic, olive oil, and lemon juice in a blender or food processor.
Puree until smooth.
Season generously with salt and pepper.
Serve in a bowl, garnished with chopped parsley.
