Hummus With Tahini

Ingredients
  Chick peas 1 Cup (16 tbs), sorted and washed (3 Cups Cooked)
  Tahini 1⁄2 Cup (8 tbs) (Middle Eastern Sesame Paste)
  Garlic 10 Clove (50 gm), coarsely chopped
  Olive oil 1 Cup (16 tbs)
  Fresh lemon juice 1⁄2 Cup (8 tbs)
  Coarsely chopped fresh parsley 1⁄2 Cup (8 tbs) (For Garnish)
  Salt To Taste
  Pepper To Taste
Directions

Soak the chick-peas in 6 cups of water overnight.
Drain and transfer to a large pot.
Add 6 cups of fresh water and bring to a boil over high heat.
Reduce the heat to moderately low and simmer for 1 1/2 hours or until very soft.
Drain well.
Place the chick-peas, tahini, garlic, olive oil, and lemon juice in a blender or food processor.
Puree until smooth.
Season generously with salt and pepper.
Serve in a bowl, garnished with chopped parsley.
