|Avocado||1 Cup (16 tbs), sieved|
|Lemon juice||1⁄2 Cup (8 tbs)|
|Pineapple juice||1 Cup (16 tbs)|
1. In a large saucepan, mix the 1 cup sugar with 1 cup water and simmer till it reaches a boil. Stir until sugar is dissolved and then set aside to cool.
2. Add avocado and fruit juices to the pan and mix thoroughly. Place in refrigerator tray and freeze until mushy.
3. Beat egg whites until stiff peaks form and while beating slowly add in the 4 tablespoons sugar into egg whites. Place frozen mixture in chilled bowl; beat.
4. Fold egg whites into mixture and then return to freezer trays. Freeze until firm.
5. Serve immediately
