Persian Rice

Ingredients
  Onion 3⁄4 Cup (12 tbs), finley chopped
  Long grain parboiled rice 1⁄2 Cup (8 tbs)
  Ground cinnamon 3⁄4 Teaspoon
  Ground cloves 3⁄4 Teaspoon
  Ground nutmeg 1 Dash
  Chicken broth 1⁄2 Cup (8 tbs)
  Thawed orange juice concentrate 1⁄2 Cup (8 tbs), thawed (Undiluted)
  Golden raisins 2 Tablespoon
  Lemon juice 1 Tablespoon
  Salt 1⁄8 Teaspoon
  Pepper 1⁄8 Teaspoon
  Spinach 3 Cup (48 tbs), chopped
  Pork roast slices 4 Ounce, sliced
  Parsley 2 Tablespoon, finely chopped
  Slivered almonds 1 Tablespoon, toasted
Directions

1. Place a large nonstick skillet over medium-high heat until hot. Add onion; saute 4 minutes or until tender. Add rice, cinnamon, cloves, and nutmeg; saute 3 minutes. Add broth and next 5 ingredients; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until rice is tender and liquid is absorbed. Remove from heat. Add spinach and pork; toss well. Let stand, covered, 10 minutes. Top each serving with parsley and almonds.
