Citrus Sherbet

Ingredients
  Oranges 4 Large, juiced
  Lemons 4 Large
  Sparkling white wine 1 1⁄4 Cup (20 tbs)
  Confectioners' sugar 1 1⁄3 Cup (21.33 tbs)
  Egg whites 4
  Sugar 1 Tablespoon
  Raspberry jam 5 Tablespoon
Directions

MAKING
1. In a bowl, mix together the orange juice, lemon juice, half of the confectioner's sugar and wine; set aside
2. In another bowl, with the rest of the confectioner's sugar, beat egg whites till thick
3. Dampen a loaf pan measuring 9"X5"X3" and sprinkle sugar on top
4. Add beaten egg into the wine mixture adn pour into the pan; add it to the freezer and freeze for ten minutes
5. Turn the sherbat into a bowl and beat for a minute; add back into the pan and freeze for anoter fifteen minutes
6. Beat again, freeze for another twenty five minutes and beat again; chill for an hour, beat again and freeze until solid
7. Remove from the freezer, allow to thaw and mix in the raspberry jam

SERVING
8. Add into four tall glasses and serve
