Korean Food: Army Base Soup (부대찌개)

Ingredients
Main ingredients:
  Rice 1 Cup (16 tbs)
  Kimchi 1⁄2 Cup (8 tbs)
  Rice cakes 1 Cup (16 tbs) (Oval shaped)
  Well fermented kimchi 1⁄2 Cup (8 tbs)
  Onion 1⁄2 Cup (8 tbs)
  Button mushrooms 1⁄2 Cup (8 tbs)
  Onion 1⁄2 Cup (8 tbs), cut into 1/4 inch pieces
  Noodles 2 1⁄4 Ounce (0.5 Of 4.3 Ounce Pack)
  Button mushrooms 1⁄2 Cup (8 tbs), cut into 1/4 inch pieces
  Tofu 3 1⁄2 Ounce (0.25 Of 14 Ounce Pack)
  Ramen noodles 1⁄2 Packet
  Canned beans 1⁄4 Cup (4 tbs)
  Tofu 1⁄4 Cup (4 tbs), cut into 1/4 inch pieces
  Ground beef/Ground pork 1⁄4 Cup (4 tbs)
  Spam 6 Ounce (0.5 Can Of 12 Ounce)
  Spam 6 Ounce, cut into 1/4-inch pieces
  Hotdogs/Sausages 3
  American cheese slice 1
  Hotdog/Sausage 3 Medium, chop diagonally
  Green onions 2
  Hot pepper 1
  Green onions 1 , cut into 1-inch pieces
  Water 6 Cup (96 tbs)
  Hot pepper 1 , chop (Optional)
  Dried anchovies 11 1⁄3 Ounce (1 Whole Pack / 6 Pieces Dried Anchovies)
Broth ingredients:
  Kelp pieces 4 (1 Inch Pieces)
  Red pepper powder 2 Tablespoon
  Dried anchovy 6 (or 1 Dried Anchovy Pack)
  Kelp 4 Medium
  Red pepper paste 1 Tablespoon
Sauce ingredients:
  Soy sauce 1 Tablespoon
  Minced garlic 1 Tablespoon
  Cooking wine 1 Tablespoon
  Black pepper 1 Teaspoon
Directions

MAKING:
1)In a saucepan or any other pan add dried anchovies packet or 6 dried anchovies, kelp, and water and boil it on medium-high.
2)Meanwhile in a bowl, combine red pepper powder, red pepper paste, soy sauce, minced garlic, cooking wine (or water) and black pepper.
3)Once the broth starts to boil, cook for 5 minutes, and then remove the kelp.
4)Boil it for another 5 minutes and take out the anchovy pack.
5)Break ramen noodles in half, slice half a can of spam into ¼ inch pieces, and slice 3 hotdogs or sausages diagonally. Get the drained beans from a can, ground beef or pork, and a slice of American cheese ready.
6)Soak 1 cup of oval rice cakes in water and chop ½ cup of well-fermented kimchi into bite-sized pieces.
7)Cut the vegetables and tofu. Slice ¼ pack of tofu, ½ cup worth of button mushrooms, and ½ cup worth of onion into ¼ inch pieces. Chop 2 green onions into 1-inch pieces and 1 hot pepper thinly.
8)In a large pot place the hot dogs, onion, kimchi, spam, tofu, mushrooms, and beans into the broth in clumps. Place the ground beef in the center of the pot.
9)Spread the rice cakes over everything and pour the sauce on top of the ground beef.
10)Once the soup starts to boil, mix the sauce into the broth. In this step, stir the center with a spoon so that the beef does not cook into a solid chunk. Cook for 10 minutes on high.
11)After 10 minutes, place the rameon noodles, green onions, and hot peppers on top of the soup. Cook for 3 to 5 minutes on high, or until the noodles are cooked.
11)Place cheese on top of the soup and turn off the heat. Cover the lid and let it set a little until the cheese melts.

SERVING:
12)Serve steaming hot and enjoy!

What does a poor, hungry Korean do with a pack of hotdogs, spam, baked beans and cheese? Add hot pepper sauce and make a delicious comforting soup! This stew called Budae jjigae which comes from the Korean War times when American Soldiers gave food to the hungry Koreans, is quiet a genius and probably the first fusion dish of Korea. Delicious though it may be, it's not the best Korea has to offer. But it makes for a wonderful family meal on a cold winter night.
