Lamb Kofta

Ingredients
  Grated onion 3 Tablespoon
  Snipped fresh parsley 2 Tablespoon
  Snipped fresh cilantro 2 Tablespoon
  Ground cumin 1⁄2 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Ground red pepper 1⁄4 Teaspoon
  Ground lamb/A mixture of ground lamb and ground beef 1 Pound
  Chicory leaves 1 Tablespoon
Directions

1. In a medium mixing bowl combine the onion, parsley, snipped cilantro, cumin, cinnamon, salt, and red pepper. Add meat and mix well. Shape about 1/4 cup of the mixture into about 3/4 inch thick PATTY; repeat to make 8 patties total.
2. Grill patties on the rack of an uncovered grill directly over medium coals for 10 to 12 minutes or till no pink remains, turning once. (Or, to broil, place patties on the unheated rack of a broiler pan. Broil patties 3 to 4 inches from the heat for 10 to 12 minutes or till no pink remains, turning once.)
3. To serve, if desired, place on a bed of cucumber slices, garnish with chicory, and serve with grilled lemon wedges.
