Apricot Glazed Seafood Kebabs
|Salmon||454 Gram, cut into large cubes|
|Peeled and deveined shrimp||225 Gram (Large Sized)|
|Sea scallops||225 Gram|
|Olive oil||30 Milliliter|
|Dried apricots||250 Milliliter|
|Granulated sugar||30 Milliliter|
|Dijon mustard||10 Milliliter|
|Apple juice||60 Milliliter|
Skewer the seafood with water soaked bamboo skewers alternating the salmon, shrimp and scallops.
In a sauce pan boil the apricots in the water for 5 minutes.
Transfer apricots to a food processor and puree.
Reserve the water.
Stir the sugar and mustard into the water.
Pour over the apricots and blend.
Return to sauce pan and stir in the apple juice, heat but do not boil.
Brush the skewers with the oil and grill on medium coals for 5 minutes per side, brushing frequently with the sauce.
Brush with sauce one final time before serving.
