Zesty Lebanese salad.
Ingredients
  Tomatoes 3 , cubed
  Cucumbers 2 Small, , quartered lengthwise, and chopped (Peeled)
  Green pepper 1 Medium, diced (Seeded, Deribbed)
  Scallions 5 , chopped
  Finely chopped parsley 2 Tablespoon
  Chopped mint/1 teaspoon dried mint 1 Tablespoon (Fresh)
  Cilantro 1 Bunch (100 gm)
  Pita bread/2-3 slices of bread 2 , cut into cubes (Toasted)
  Olive oil 1⁄2 Cup (8 tbs)
  Lemon juice 1⁄2 Cup (8 tbs)
  Salt To Taste
  Black pepper To Taste
Directions

Preparation

1. Toss veggies

2. Whisk oil, lemon juice and salt/pepper.

3. Pour dressing over veggies.

4. Top with toasted pita.
