|Veal knuckle||1 Large|
|Garlic||4 Clove (20 gm), cut|
|Onions||2 Cup (32 tbs), chopped|
|Ground coriander||1 Teaspoon|
|Chili powder/1 can peeled green chilies, chopped||1 Tablespoon|
|Lemon juice||1 Tablespoon|
Cut tripe into strips 3/4 inch wide.
Put all ingredients except hominy and lemon juice in a large pot and simmer for 6 hours, or until tripe is tender, adding more water if necessary.
Add hominy, and heat.
Add lemon juice and serve in soup dishes, with chopped green onions if desired, and if possible chopped cilantro.
