Oriental Cabbage Slaw
|Cucumber||1 Medium, halved lengthwise and thinly sliced|
|Fresh pea pods||1 Cup (16 tbs), halved|
|Rice vinegar||1⁄4 Cup (4 tbs)|
|Salad oil||1 Tablespoon|
|Toasted sesame oil||2 Teaspoon|
|Red chili paste||1⁄2 Teaspoon|
|Shredded chinese cabbage||4 Cup (64 tbs)|
|Chopped honey roasted peanuts||1⁄2 Cup (8 tbs)|
1. In a large mixing bowl combine the cucumber and pea pods. For dressing, in a small mixing bowl stir together the rice vinegar, salad oil, sesame oil, sugar, red chili paste (if desired), and salt. Pour over cucumber and pea pods, stirring to coat. Cover and chill for 4 to 24 hours.
2. Just before serving, stir in the cabbage and peanuts.
