Cut a lid from the marrow lengthwise, scoop out the seeds and pitch and cook in little water slowly.
Meanwhile clean and cook the spinach dry, and season with salt, pepper and nutmeg.
Add the butter, cheese, parsley and crushed garlic.
Dry the cooked marrow and fill with spinach while still hot.
Place in dish, cover with crumbs, dot with butter and brown under hot grill.
