Watermelon Almond Sherbet

Ingredients
  Watermelon 1
  Cornstarch 2 Tablespoon
  Almond extract 1 Teaspoon
  Sugar 1⁄3 Cup (5.33 tbs)
  Salt 1⁄2 Teaspoon
  Grated lemon peel 1 Teaspoon
Directions

Remove the rind and 1 inch of white from melon and put red meat through food chopper, accumulating 4 cups pulp and juice.
In saucepan over low heat cook the other ingredients.
When well blended, stir in melon and restore to cooking temperature.
Beat thoroughly and freeze.
Makes 8 servings.
