Ingredients
  Cracked wheat 1 Cup (16 tbs) (Bulgur)
  Water 2 Cup (32 tbs)
  Parsley 1⁄2 Cup (8 tbs), chopped
  Scallions 1⁄2 Tablespoon, minced
  Mint 2 Tablespoon, chopped (You May Substitute 2 Teaspoons Dried Mint If Fresh Is Not Available.)
  Olive oil 2 Tablespoon
  Lemon juice 2 Teaspoon
  Sea salt/Seasoned salt/ salt-free seasoning 1⁄2 Teaspoon
  Ground black pepper To Taste
  Tomato 1 Small, chopped
Directions

GETTING READY 1) Soak the wheat in water until water is absorbed and wheat becomes hydrated. 2) It should be soaked in the water for at least 30-60 minutes. MAKING 3) Mix with the wheat, parsley, scallions, fresh or dried mint along with lemon juice, oil and salt. 4) Add pepper, if required. Mix the combination well. 5) Mix tomatoes to the wheat mixture and combine well. SERVING 6) Serve as a side dish.
