Korean Food: Butter Bean Jeon (콩 전)

Ingredients
  Butter beans/Tofu 16 Ounce, drained, finely chopped (1 can)
  Eggs 2
  All purpose flour 1⁄4 Cup (4 tbs)
  Garlic 2 Tablespoon, chopped finely
  Red hot pepper 1⁄2 Tablespoon, chopped finely
  Green onion 1 Tablespoon, chopped finely
  Salt 1⁄2 Teaspoon
  Cooking oil 4 Tablespoon (For frying)
Directions

MAKING
1. Take a bowl, add the beans, garlic, green onions, hot peppers, eggs, flour, salt and mix everything together well.
2. In a heated and oiled pan, spread a spoonful of batter in a round shape. Fry them on medium high heat until both sides of the patties become golden brown.

SERVING
3. Serve warm as a finger food or a side dish or an appetizer with your favorite sauce.

Korean Butter Bean Patty
This butter bean patty recipe is an adaptation of a common type of Korean tofu patty side dish DuBu Jeon. Instead of using tofu, Aeri uses butter beans which can be used from the can or soaked and boiled until soft. If you are not a big tofu fan but like Korean patty dishes then this is a great way to replace tofu. The creamy, nutty flavor of the butter beans combines well with the garlic and hot pepper. This is indeed a wonderful appetizer and or side dish idea.
