Marinated Seafood Kebabs
|Prawns||2 Pound, shelled and deveined (1 Kilogram)|
|Fish fillets||1⁄2 Pound, cubed (250 Gram)|
|Boiling water||250 Milliliter (1 Cup)|
|Coconut||1⁄2 Cup (8 tbs)|
|Soy sauce||2 Teaspoon|
|Garlic||1 Clove (5 gm), crushed|
|Ground cumin||2 Teaspoon|
|Lemon juice||1 Tablespoon|
|Tomato and mint salad||1 Cup (16 tbs)|
Remove boiling water from heat, add coconut and infuse for 6-8 minutes, then pour into a blender and whirl 2-3 minutes.
Strain into a bowl through muslin to extract coconut milk.
Add soy sauce, garlic, salt, pepper, cumin and lemon juice and mix well.
Add prawns and fish to the mixture and marinade for 1-1 1/4 hours, stirring and basting occasionally.
Drain seafood and thread, alternately, on skewers.
Place on the grid over medium coals and cook 12-15 minutes, turning often.
Baste with the marinade while cooking.
