J's Raw Pancit

In this episode of The Aimless Cook, we show you how to make a fresh and healthy, raw pancit. Pancit is a popular Filipino stir-fried noodle dish that is a favorite for many. Today, we will be using fresh kelp noodles and local farm fresh vegetables to make something crisp, vibrant and truly unique. I hope you enjoy!
Ingredients
  Noodles 8 Ounce (Kelp noodles used (soaked in cold water for a few minutes))
For the dressing
  Light soy sauce 1 1⁄2 Tablespoon
  Sesame oil 1 1⁄2 Tablespoon
  Lime 1 Medium, juiced
The vegetables
  Cilantro 1⁄2 Bunch (50 gm), chopped finely
  Carrot 1⁄2 Medium, julienned
  Cucumber 1⁄2 Medium, julienned
  Red bell pepper 1⁄2 Medium, julienned
  Red onion 1⁄4 Medium, julienned
Directions

MAKING
1. Take a bowl and add light soy sauce, sesame oil, juice squeezed out of one lime, chopped cilantro and the julienned vegetables. Toss them in the bowl so that all the vegetables get the flavor of the dressing in them.
2. Add the kelp noodles and mix it well till all the vegetables and the dressing is well blended with the noodles.

SERVING
3. Serve with strips of carrots or any other vegetable.
