Indonesian Peanut Spread

Ingredients
  Onion 1 Medium, chopped
  Garlic 1 Clove (5 gm), minced
  Peanut oil/Vegetable oil 1 1⁄2 Teaspoon
  Flaked coconut 1⁄2 Cup (8 tbs)
  Grated lemon rind 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Peanut butter 2⁄3 Cup (10.67 tbs)
  Water 2 Tablespoon
  Finely chopped fried red chili pepper 1⁄2 Teaspoon
  Grated fresh ginger 1⁄8 Teaspoon
Directions

Saute onion and garlic in peanut or vegetable oil until soft. Combine with remaining ingredients.
Store in a covered container in the refrigerator. Serve at room temperature.
