Oriental Chicken In Peanut Sauce
|Whole wheat elbow macaroni||1 1⁄2 Cup (24 tbs), uncooked|
|Lemon juice||2 Tablespoon|
|Frozen broccoli cuts||2 Cup (32 tbs)|
|Chopped onion||1⁄3 Cup (5.33 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Cut up cooked chicken||1 1⁄2 Cup (24 tbs)|
|Italian seasoning||1⁄4 Teaspoon|
|Low fat plain yogurt||1 Cup (16 tbs)|
|Grated parmesan cheese||2 Tablespoon|
|Chopped walnuts||2 Tablespoon|
Prepare macaroni as directed on package, adding 2 tablespoons lemon juice to cooking water.
In 2-quart casserole, combine broccoli, onion, garlic and 2 tablespoons water.
Microwave at High for 6 to 8 minutes, or until tender-crisp, stirring once.
Stir in macaroni, chicken, Italian seasoning and pepper.
Microwave at High for 3 to 6 minutes longer, or until heated through, stirring once.
Blend in yogurt and Parmesan cheese.
Sprinkle with walnuts before serving.
