Cold Cucumber Soup (Oi Naengguk)

Oi naengguk is another simple but popular Korean side dish, perfect for summer. I have made so many different kinds of naengguk (cold soup) using different vegetables, but this is my most favorite recipe. The seasoning in this recipe could be changed a little according to your taste, more sugar if you like it sweeter, or more chili peppers if you like it spicier.
Ingredients
  English cucumber 1⁄2 , julienned
  Garlic clove 1 , chopped
  Green onion 1⁄2 , chopped finely
  Green chilli pepper 1⁄2 , remove seeds and chop
  Salt 1 Teaspoon
  Fish sauce/Salt 1 Teaspoon
  Apple vinegar 1 1⁄2 Tablespoon
  Sugar 1 Teaspoon
  Purified water 1 1⁄2 Cup (24 tbs)
  Ice cubes 6
For garnish
  Red chile pepper 1 , sliced
  Cooked rice 1⁄2 Cup (8 tbs)
  Pickled sesame leaves 4
Directions

MAKING
1. In a bowl, put together all the ingredients except water, ice and red chili pepper.
2. Stir well to mix and adding water and ice cubes, stir to mix.

SERVING
3. Serve the soup cold garnished with red chili pepper and with cooked rice and pickled sesame leaves on side.
