Tabbouleh Tomato Mint Salad
|Cracked wheat||1 Cup (16 tbs) (Bulgur)|
|Chopped parsley||1 1⁄2 Cup (24 tbs)|
|Chopped fresh mint||1⁄4 Cup (4 tbs)|
|Chopped scallions/Minced onion||1⁄2 Cup (8 tbs) (Green Onions)|
|Chopped ripe tomatoes||1 Cup (16 tbs), peeled|
|Salad oil||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
Soak the bulgur 2 hours in water to cover.
Mix the bulgur with the parsley, mint, scallions, and tomato, and season to taste.
Shake up the oil and lemon juice together and pour over the bulgur.
Toss lightly to blend well and correct seasoning.
