Tabbouleh Tomato Mint Salad

Ingredients
  Cracked wheat 1 Cup (16 tbs) (Bulgur)
  Chopped parsley 1 1⁄2 Cup (24 tbs)
  Chopped fresh mint 1⁄4 Cup (4 tbs)
  Chopped scallions/Minced onion 1⁄2 Cup (8 tbs) (Green Onions)
  Chopped ripe tomatoes 1 Cup (16 tbs), peeled
  Salad oil 1⁄2 Cup (8 tbs)
  Lemon juice 1⁄4 Cup (4 tbs)
Directions

1.
Soak the bulgur 2 hours in water to cover.
Drain well.

Mix the bulgur with the parsley, mint, scallions, and tomato, and season to taste.
3.
Shake up the oil and lemon juice together and pour over the bulgur.
Toss lightly to blend well and correct seasoning.
