Fried Pork Flavored With Lime Juice And Soy Sauce

Ingredients
  Boneless pork 1 1⁄4 Pound, julienned
  Oil 6 Tablespoon
  Onions 4 , thinly sliced
  Red hot chilies 4 , sliced thinly crosswise
  Sugar 1⁄4 Cup (4 tbs)
  Dark soy sauce 1⁄4 Cup (4 tbs)
  Fresh lime juice 1⁄4 Cup (4 tbs), strained
  Salt 1⁄2 Teaspoon
Directions

Heat a heavy frying pan or wok over high heat until very hot, add the oil and stir fry the onions until limp.
Add the chilies immediately and then the pork.
Stir fry and, when the pork is half cooked, after four or five minutes, add the sugar, reduce the heat to medium, then add the soy sauce, lime juice and salt.
Simmer for two minutes.
