|Quinces||4 Small (Or 2 Large Size)|
|Lemon juice||1 Tablespoon|
|Butter||4 Ounce (125 Gram)|
|Icing sugar||5 Ounce (155 Gram)|
Peel the quinces neatly then cut off the tops so that they are the same height.
Remove the core from the top, using a sharp knife and taking care not to pierce the bottom of the fruit.
Brush with lemon juice, inside and out, then arrange in a shallow, buttered ovenproof dish.
Mix together the butter, cream and icing sugar and when well blended pour into the quinces and sprinkle the tops with extra icing sugar.
Bake at 180°C/350°F/Gas Mark 4 for about 35 minutes.
