Tempeh Salad With Peanut Sauce

This vegetarian tempeh recipe features tempeh, which is very useful in healthy vegetarian recipes as an excellent source of protein and as a quick addition to a meal. Pour a healthy zucchini and yellow pepper sauce on top to add flavor while getting more vegetables in your diet!
Ingredients
  Tempeh 8 Ounce, diced (1 Package)
  Celery stalks 3 , chopped
  Field cucumber 1⁄2 Large, diced
  Green onions 3 , chopped
  Garlic 1 Clove (5 gm), minced
  Peanut butter 1 Tablespoon
  Sesame oil/Olive oil 1 Tablespoon, untoasted
  Tamari/Soy sauce 1 Tablespoon
  Toasted sesame oil 1 Teaspoon, toasted
  Apple cider vinegar/Brown rice vinegar 2 Tablespoon
  Chili paste To Taste
Directions

Prepare the sauce by whisking all the ingredients together in a bowl. Adjust tamari and chili to your taste, add a bit of water if you want a thinner consistency, and let the sauce sit to combine while you prepare the vegetables.
Cut the vegetables and tempeh to approximately the same size, and toss together in a bowl. Pour the sauce over them, and toss to coat.
