Filipino Pork Sausage

Homemade skinless longanisa is one of my favorite Pinoy recipe. I really like having this for breakfast, especially when it is served with garlic fried rice and fried eggs.
Ingredients
  Ground pork 2 Pound (70% Lean Meat And 30% Fat)
  Garlic head 2 , crushed
  Ground black pepper 1 Tablespoon
  Kosher/Sea salt 1 Tablespoon
  Cider vinegar 1 Cup (16 tbs)
  Brown sugar 4 Tablespoon (Or To Taste)
  Annatto powder 2 Teaspoon (For Coloring Only)
Directions

Mix all ingredients.
Shape like a sausage.
Cure inside the refrigerator for at least one day.
Fry and serve with fried rice and fried eggs.
