Barbecued Chicken

pinoyrecipes's picture
The other day, I was wondering what to do with the chicken breasts that I have in the freezer. I was getting really hungry so I went ahead and thaw them and while I was doing that, I grabbed some of my seasonings that I have on the shelf. I don’t really know if I should call this recipe a Pinoy Recipe because I haven’t seen anybody that I know of made this kind of chicken recipe.
Ingredients
  Salt 1 Teaspoon
  Paprika 2 Teaspoon
  Garlic powder 1⁄2 Teaspoon
  Ground black pepper 1⁄2 Teaspoon
  Olive oil 2 Tablespoon
  Chopped onion 1 Medium
Minced garlic 3 Clove (15 gm)
Barbecue sauce 1 Cup (16 tbs) (Any Favorite)
Lemon juice 1⁄4 Cup (4 tbs)
Brown sugar 1⁄2 Cup (8 tbs)
  Mustard 2 Tablespoon
  Sambal sauce 1 Tablespoon (Hot)
  Fish sauce To Taste
Directions

Preheat oven to 450F.
Combine all the rub ingredients.
Roll the chicken over the rub.
Put the chicken with rub inside the oven for 20 minutes.
Heat some olive oil in a saucepan.
Saute the garlic.
Add the onion.
Add the barbecue sauce or ketchup.
Add the lemon juice.
Add the brown sugar.
Add a little bit of water if needed.
Add the mustard but this is optional.
Let it simmer on low heat until it has thickened.
Add the hot sauce.
Add fish sauce if you want.
Dip the chicken into the sauce.
Put it back inside the oven for another 10 minutes. Or you can also grill it for better flavor.
