Chicken and Vegetable Satay
|Chicken breast||1⁄2 Pound, kin removed, cut in 3/4 inch cubes (225 Gram)|
|Salt-reduced soy sauce||15 Milliliter (1 Tablespoon)|
|Onion||1 Medium, quartered|
|Red pepper||1⁄4 , cut into 3/4 inch cubes|
|Orange juice||60 Milliliter (1/4 Cup)|
1 Combine chicken with soy sauce and let marinate 15 minutes. Thread chicken, onion, red pepper and mushrooms onto satay sticks. Place on a sheet of foil and brush with orange juice.
2 Broil under medium heat until chicken is white. Baste with orange juice frequently to prevent drying out. Serve with brown rice.
