Wrapped Indonesian Curried Chicken
|Whole chicken breast||1 , skinned boned halved|
|Savory seasonings poultry blend||1 Teaspoon|
|Curry powder||2 Teaspoon|
|Chili powder||1⁄2 Teaspoon|
|Ground ginger||1 Dash|
|Tomato||1 Large, seeded and chopped|
|Onion||1 Small, chopped|
|Shredded coconut||2 Tablespoon|
|Sliced almonds||1 Tablespoon|
|Herb oil||1 Teaspoon|
Pound each chicken piece with meat mallet to 1/2 inch thickness.
Sprinkle Poultry Blend, curry powder, chili powder and ginger over meat.
Place one third tomato pieces, onion pieces, coconut and almonds in center of each half breast of chicken.
Wrap by rolling up and tucking meat around ends to encase stuffing.
Secure with wooden picks.
Preheat oil in small frying pan over medium heat.
Add wrapped chicken; fry 6 minutes.
Turn over; add remaining tomato, onion, coconut and almonds.
Cover; fry 5 to 8 minutes or until meat is white and tender.
