1. Wash the turkey wings, set aside.
2. Roughly chop the carrots, celery and onion, set aside.
3. In a large deep pot place the turkey wings and add carrots, celery stalk, bay leaf, cinnamon stick, onion, English pepper, black pepper, nutmeg, salt, coriander and finally water.
4. Bring it to a boil and then cover and simmer for 45-60 minutes.
5. Once done turn off the heat and let it rest.
6. Serve with fresh salad and baked potato.
