Ingredients
  All purpose flour 2 Cup (32 tbs)
  Salt 1 Teaspoon
  Egg 1 , beaten
  Water 1⁄4 Cup (4 tbs)
Directions

In a bowl, place the flour and salt (which have been sifted together).
Form a well in the center of the flour; into it place the egg and the water and work it into the flour with your fingers, mixing and kneading until a smooth dough develops.
Separate the dough into halves.
Lightly flour a pastry board, roll out the halves into sheets no thicker than 1/16 of an inch thick.
With a pastry wheel, cut the sheets of dough into 3 1/2-inch squares.
Cover the squares with a damp towel while you prepare a filling of your choice.
