Grilled Lamb Kebabs
|Olive oil||1⁄2 Cup (8 tbs)|
|Lemon||1 , juiced and zest grated|
|Garlic||1 Clove (5 gm), minced|
|Fresh rosemary sprigs/1 1/2 teaspoons dried rosemary||1 Tablespoon|
|Ground coriander||1 Tablespoon|
|Black pepper||To Taste (Several Grinds)|
|Lamb||2 Pound, cut into 2-inch cubes|
Mix first 7 ingredients in bowl.
Add lamb and marinate in refrigerator 8 hours or overnight, turning occasionally.
Drain lamb and place on skewers.
Grill over hot coals basting occasionally with marinade: 5 minutes on each side for medium rare; 7 minutes on each side for medium.
