Filet Of Flounder With Oyster Sauce

Ingredients
  Pepper white 1⁄2 Teaspoon
  Black pepper 1⁄2 Teaspoon
  Dry mustard 1⁄4 Teaspoon
  Cayenne pepper 1⁄4 Teaspoon
  Celery seed 1⁄2 Teaspoon
  Ground ginger 1⁄4 Teaspoon
  Flour 1 Cup (16 tbs)
  Flounder filets 4
  Milk 1 Cup (16 tbs)
  Butter 3 Tablespoon
  Oyster sauce 1⁄4 Cup (4 tbs), heated
Directions

Place spices in mortar and grind together with pestle. Mix flour with spices.
Dip filets in milk, then dredge in spiced flour.
Heat butter in cast iron pan over medium heat. Add filets and cook 3 minutes on each side. Remove fish and serve with Oyster Sauce.
